My current research program focuses on the development of Optical Sensor Technologies for Food Process Monitoring and Control. Three different optical sensor technologies using light backscatter are currently under development: a) combined monitoring of milk coagulation and curd syneresis during cheese making, b) determining the degree of whey protein denaturation during thermal treatment of milk, and c) determining the optimum degree of emulsification in meat emulsions. The overall objective of my academic appointment is teaching undergraduate students in the areas of Food Science and Technology, Dairy Science and Technology and Food Processing Engineering, as well as training of Masters and Ph.D. students in the Food Processing area through the development of new optical sensor technologies with near term commercial application.
